Who doesn't love good Latin food? Especially homemade food!
My mother simply makes the BEST homemade menudo, hands down. It has just the right amount of spices. I think that everyone enjoys a good dish of ol' mums homemade food, whatever it may be, right?  :)

This is one of my fave Nicaraguan dishes called "chancho con yuca", or translated in English, pork with yucca root. The dish calls for pork ribs, seasoned in a delicious mix of achiote and other spices, topped with chopped cabbage and tomatoes seasoned with vinegar and salt, all served on a little bed of boiled yucca.

From West Coast to the South: My Thoughts on Moving from CA to FL

No doubt about it that CA has some of the most beautiful scenery in all the United States. Well, some may disagree and claim that their state is the most lovely, naturally. What I love about my home state is the variety of things we have here: mountains, beaches, cold and warm's awesome. I have had the privilege of living in this beautiful state for my entire 31.5 years of life on this wonderful planet, and I feel proud to call myself a Californian. However, my family and I will be leaving her beauty behind and heading south to Florida in just a few short months. Although I am excited about experiencing something new,  lately I have been feeling in a reflective mood and thinking back on all the wonderful sights that I have been able to see here in the Golden State, with my faves being Yosemite National Park and San Francisco.
Even though I did do some traveling around this state, I regret that I did not get a chance to see every single thing out there. I have always wanted to visit the northern area and the other national parks and mountains that are here in CA, such as Mt. Shasta and Mt. Whitney. I had the fortunate experience of doing some hiking in my beloved Yosemite National Park several times, but I have always wanted to explore other places as well. If you have not yet had the opportunity to visit this magnificent place, you really need to plan a trip there, it is amazingly breathtaking. I have visited the park during each season, and honestly it is difficult for me to choose my favorite one. Each boasts beautiful scenery. From the soft, white snow blanketing the mountain tops, to the cascading waterfalls during the summer, anytime is a great time to visit.
And of course, there's my other love, San Francisco. Oh San Francisco, how I love thee! I never grow tired or bored of visiting this most unique city. What's not to love about it? It's got great food, culture, spunk, sophistication, and tons more. Whatever food you are in the mood for, it's most likely to be available. Our go-to food joints are always in the Chinatown area. The Golden Gate bridge is awesome, as is Alcatraz. Hell, everything about SF is wonderful, in my opinion! I surely will miss visiting you often San Francisco. But, we will meet again in due time.

And now it's on to new scenery, new experiences, new everything in Florida, which in my opinion is another cool state. Although I won't have my beautiful majestic mountains of Yosemite to explore on a yearly basis as was customary, or the crowded streets of San Francisco, dodging traffic and people as I make my way to my favorite Chinese restaurant, I will have the warm beaches of Florida to greet me, and hopefully equally warm people as well~  :)  :)

As everyone knows by now, the people of Venezuela recently chose their new leader, Nicolas Maduro. While many have been celebrating this win, there are those who are angry with this decision, calling for a recount, including Henrique Capriles. Joining in this refusal to recognize Maduro as the legitimate winner is the United States gov't. Sec'y of State John Kerry stated that "there ought to be a recount."      Well, maybe so...but then again, maybe not. 
Right now there are many important issues of concern here in the US, such as gun laws, immigration reform, and most recently the Boston tragedy, in addition to the high unemployment rates that we continue to experience. I just feel that we should stop meddling in the affairs of others and concern ourselves with what is occurring right here at home. Let the people of Venezuela worry about the election results~
